The 2006 Mas des Chimeres (“mah day sheemare”) produced by Guilhem Darde is our 2008 Wine of The Year. It is a blend of approximately 70% Syrah, 20% Grenache, 5% Cinsault and 5% Mourvedre. These varietals are at their best in the South of France where they reach full maturity and produce wines full of rich spicy fruit. Dry harsh weather and poor soil conditions ensure low yields andgrapes of high concentration. The wine is deep purple with a ripe nose of cloves,cinnamon and coffee. The mid palate if fat with concentrated black fruits that literally jumps from the glass. The wine is aged in oak barrique and bottled 100% unfined and unfiltered. The fine tannins are balanced by the rich fruit and the wine finishes with notes of licorice, coffee and kirsch. This wine will throw off some sediment so it is best to stand it up for a day or two before serving.
